  • Can Design: Joe Exotic is breeding some strange animals in psychedelic colors
  • Appearance: medium thickness yellow to orange haze 4/6
  • Aroma: strong grapefruit upfront, citrus fruits and orange juice on the backend 21/24
  • Flavor: starts as grapefruit juice, quickly morphs to peach juice and orange juice middle, bitter finish with a touch of fresh guava. Two distinct halves to this beer, first half is juice and the second half is fresh fruit. 36/40
  • Mouthfeel: smooth, creamy, light and thin finish that is refreshing 9/10
  • Overall Impression: easy drinking for 7.0% ABV. First half of the beer is all Citra hops and the second half is all Galaxy hops. I could drink a crap ton of these for a mid-level ABV% hazy IPA.18/20

  • Citra hops and Galaxy hops play nicely together in the sandbox due to the juice smoothie of grapefruit, peach and orange. The guava fruit note finish elevates this IPA to an almost DIPA taste. Celestial Beerworks continues to dominate the hazy IPA game in the greater Dallas, TX metroplex.

Brewery Background

Celestial Beerworks (CB) is located in northwest Dallas, Texas and opened in October 2018. Matt and Molly Reynolds opened a tap room in Dallas’ Medical District at 2530 Butler Street, Dallas, Texas 75235. I was fortunate to stop by in early October 2021 and was greeted by an upbeat and knowledgeable staff. Layout focuses on CB’s core business principles of art, science and delicious fresh beers. Several local beer geeks were in attendance, and wanted to talk about the 2021 Red River Showdown between Oklahoma and Texas that was to be played that weekend. Sooners ended up winning an epic game 55-48.

CB’s mantra is “haze for days,” and they definitely walk the talk with the consistent quality of their hazy IPAs. Beer portfolio includes twenty-eight hazy IPAs, fifty-four hazy DIPAs and twenty hazy TIPAs, which equates to approximately 36% of CB’s beer releases since 2018. CB also makes tasty sours, stouts and pilsners. Very active on Instagram and CB’s creative advertising is at a level most breweries can only dream about.

Distribution Across Texas

CB’s beers are currently available at forty-three locations in Texas. Beers are available via online pre-order and can be subsequently picked up or delivered curbside. Have maximized their taproom space by hosting the following recurring events:

CB is hip and definitely cool. They are also the best brewery in Dallas and are showing no signs of slowing down or stagnating. Jump on this space ship tomorrow and enjoy the ride to beer geek nirvana.

CB has the “stellar” beers figured out with an average Untappd rating of 4.10/5.00 for the above listed beers. Based on how tasty Stellar Remants ended up being, I’m focused on trying DDH Stellar Remnants in 2022. It’ll be interesting to see if the DDH IPA batch has a “bigger and better” aroma when compared to the IPA batch. Time will tell and the journey will be memorable.

Sports Comparison for this Libation

Micah Parsons, linebacker, of the Dallas Cowboys. Born in Harrisburg, Pennsylvania and played college football at Penn State University. Led the Nittany Lions defense with 82 tackles during his freshman season in 2018, despite starting only one game. Had a breakout sophomore season in 2019 with 109 tackles, 5 sacks, and 4 forced fumbles. Named the Big 10 linebacker of the year for the 2019 season by receiving the Butkus-Fitzgerald award. Most Valuable Player of the 2019 Cotton Bowl with 14 total tackles, 2 sacks and 2 forced fumbles. Significantly helped Penn State beat Memphis 53-39. Opted out of the 2020 college football season due to Covid-19.

Was the #12 pick overall of the 2021 NFL Draft by the Dallas Cowboys. Signed a four year rookie contract on 6/9/21 for $17M. Moved from linebacker to defensive end during week 2 of the 2021 NFL season, due to a foot injury sustained by DeMarcus Lawrence. Parsons flourished as an edge pass rusher for the rest of the 2021 season. Ended up with 84 tackles, 13 sacks and 3 forced fumbles. Those monster statistics translated to being named NFL First Team All-Pro by the Associated Press, setting the Dallas Cowboys franchise record for sacks in a season, and being the unanimous NFL Defensive Rookie of the Year.

The future is very bright for Micah Parsons and I’m sure he’ll be wearing shades. Parson’s stellar play in 2021 is now just a remnant of the Dallas Cowboys franchise history, since they gagged yet again in the playoffs against San Francisco on 1/16/22.
